Step 1Place watermelon and lemon juice to blender and blend until smooth. Add sugar, if desired.
Step 2Strain through a fine sieve into a serving jug. Add mint and ice cubes and stir to combine. Serve immediately.
Pour into Popsicle moods and freeze if desired. Watermelon juice can be frozen for up to one week.
